Asian Watercress Salad

INGREDIENTS

  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon Just Foods Organic Crushed Chilli
  • 1/2 teaspoon Just Foods Organic Crushed Ginger
  • 1 bunch watercress, washed and dried
  • 1 large Lebanese cucumber, shaved lengthways
  • 1 bunch fresh coriander leaves
  • 1 bunch fresh mint leaves
  • 2 tablespoons raw cashews, toasted

METHOD

  1. Whisk together lime juice, soy sauce, chilli and ginger in a small bowl.
  2. Combine watercress, cucumber, coriander and mint in a salad bowl or serving plate.
  3. Drizzle with dressing and gently toss to combine. Sprinkle cashews on top and serve.
