Asian Watercress Salad
INGREDIENTS
- 1 tablespoon fresh lime juice
- 1 tablespoon soy sauce
- 1 teaspoon Just Foods Organic Crushed Chilli
- 1/2 teaspoon Just Foods Organic Crushed Ginger
- 1 bunch watercress, washed and dried
- 1 large Lebanese cucumber, shaved lengthways
- 1 bunch fresh coriander leaves
- 1 bunch fresh mint leaves
- 2 tablespoons raw cashews, toasted
METHOD
- Whisk together lime juice, soy sauce, chilli and ginger in a small bowl.
- Combine watercress, cucumber, coriander and mint in a salad bowl or serving plate.
- Drizzle with dressing and gently toss to combine. Sprinkle cashews on top and serve.
