San Choy Bau

INGREDIENTS

  • 2 tablespoons peanut oil
  • 1 small onion, chopped
  • 2 chicken thigh fillets, finely diced
  • 1 carrot, coarsely grated
  • 2 teaspoons Just Foods Organic Crushed Garlic
  • 2 teaspoons Just Foods Organic Crushed Ginger
  • 1 teaspoon Just Foods Organic Crushed Chilli
  • 1 corn cob, kernels removed
  • 500g pork mince
  • 40ml (2 tablespoons) oyster sauce, plus extra to drizzle
  • 20ml (1 tablespoon) light soy sauce
  • Juice of 1/2 lime
  • Handful coriander, roughly chopped
  • 2 baby cos lettuce leaves, separated and washed, to serve
  • Bean sprouts, to serve
  • Lime wedges, to serve

METHOD

  1. Heat half the oil in a wok over medium-high heat. Add the onion and cook for 4 minutes, add ginger and chicken, cook for 5 – 8 minutes or until golden brown and cooked through. Add carrot and corn kernels and cook for a further 2 minutes. Place aside.
  2. Add remaining oil add garlic, chilli and chicken mince to wok. Break up mince with back of a wooden spoon pressing against the side of the wok until the chicken is cooked through. Add the oyster sauce, soy sauce and lime juice, and cook for a further 2 minutes until the sauces are combined. Remove from heat and stir in the coriander.
  3. Serve with lettuce leaves, bean sprouts and lime wedges.
