Red Chilli Chutney

INGREDIENTS

  • 1 large red capsicum, chopped
  • 1 large tomato, roughly chopped
  • 2 teaspoon Just Foods Organic Crushed Garlic
  • 1/4 cup lemon or lime juice
  • 1/2 teaspoon salt
  • 1/2 cup (110g) caster sugar

METHOD

  1. Place capsicums in a frying pan and cook over a medium heat until it becomes soft.
  2. In a food processor, add capsicums and tomato and blitz until a thin sauce is formed.
  3. Transfer the sauce into a large saucepan. Add garlic, chilli, citrus juice, and salt and bring to the boil. Reduce heat to low and simmer for 5 minutes.
  4. Pour into sterilised jars and allow to cool before refrigerating.

Tip: If mixture is too runny, strain some of the liquid using a colander.
