Chicken & Chilli Sausage Rolls

INGREDIENTS

  • 1 cup (70g) fresh breadcrumbs
  • 500g chicken breast mince
  • 1 egg, lightly beaten
  • 1 small carrot, peeled & finely grated
  • 1 teaspoon Just Foods Organic Crushed Garlic
  • 1 teaspoon Just Foods Organic Crushed Ginger
  • 1/2 teaspoon Just Foods Organic Crushed Chilli
  • 1 spring onion, finely chopped
  • 3 teaspoons fish sauce
  • 1/2cup chopped coriander leaves
  • 1/3 cup plain flour
  • 2 sheets frozen puff pastry, just thawed
  • Extra egg, beaten with 1 tablespoon milk
  • 1 tablespoon sesame seeds
  • Sweet chilli sauce or hot tomato chutney, to serve

METHOD

  1. Preheat the oven to 220 C (200 C fan forced) and line 2 baking trays with baking paper.
  2. In a large bowl mix together breadcrumbs, chicken mince, egg, carrot, garlic, chilli, ginger, spring onions, fish sauce, brown sugar and coriander.
  3. Place each pastry sheet onto a piece of baking paper and cut pastry in half. Divide the chicken mixture into 4 portions. Use the flour on your hands and board as chicken mix may be sticky. Roll into sausage shapes the same length as your pastry.
  4. Place chicken in the centre of the halved pastry. Brush egg wash either side of the chicken mixture. Fold over pastry to encase filling. Press down with a fork to seal the edge. Repeat with remaining pastry and filling. Brush rolls with egg wash and sprinkle with sesame seeds. Cut rolls into 2.5 cm pieces and place on prepared oven trays.
  5. Bake for 20-25 minutes until the rolls are lightly browned and cooked through. Place on serving board and serve with chilli sauce or hot tomato chutney.
