Cauliflower & Potato Curry

INGREDIENTS

  • 4 tablespoons coconut oil or olive oil
  • 1 large onion, diced
  • 1 teaspoon Just Foods Organic Crushed Garlic
  • 1/2 teaspoon Just Foods Organic Crushed Ginger
  • 1/2 teaspoon Just Foods Organic Crushed Chilli
  • 2 teaspoons garam masala
  • 1 teaspoon ground cardamon
  • 1 teaspoon ground coriander
  • 2 teaspoons ground cumin
  • 1/2 teaspoon paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon ground turmeric
  • 1 tablespoon tomato paste
  • 1 teaspoon ground turmeric
  • 1 teaspoon sea salt
  • 400ml can light coconut milk
  • 2-3 medium (400g) potatoes, peeled and cubed
  • 1/2 cauliflower, broken into florets
  • Large handful coriander

METHOD

  1. Heat oil in large saucepan, add onion and cook over low heat for 5 minutes or until translucent. Add garlic, ginger, chilli and cook over a medium heat for a further 5 minutes. Add and spices and cook for 3 minutes or until you can smell the aromatics
  2. Add tomato paste, salt and coconut milk. Add potatoes, cover and simmer for 15 minutes or until potato is almost tender.
  3. Add cauliflower and cook for a further 15 minutes. Tear coriander on top and enjoy with steamed brown rice.
