Cauliflower & Potato Curry

INGREDIENTS
- 4 tablespoons coconut oil or olive oil
- 1 large onion, diced
- 1 teaspoon Just Foods Organic Crushed Garlic
- 1/2 teaspoon Just Foods Organic Crushed Ginger
- 1/2 teaspoon Just Foods Organic Crushed Chilli
- 2 teaspoons garam masala
- 1 teaspoon ground cardamon
- 1 teaspoon ground coriander
- 2 teaspoons ground cumin
- 1/2 teaspoon paprika
- 2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 tablespoon tomato paste
- 1 teaspoon ground turmeric
- 1 teaspoon sea salt
- 400ml can light coconut milk
- 2-3 medium (400g) potatoes, peeled and cubed
- 1/2 cauliflower, broken into florets
- Large handful coriander
METHOD
- Heat oil in large saucepan, add onion and cook over low heat for 5 minutes or until translucent. Add garlic, ginger, chilli and cook over a medium heat for a further 5 minutes. Add and spices and cook for 3 minutes or until you can smell the aromatics
- Add tomato paste, salt and coconut milk. Add potatoes, cover and simmer for 15 minutes or until potato is almost tender.
- Add cauliflower and cook for a further 15 minutes. Tear coriander on top and enjoy with steamed brown rice.
